2012 Rubinelli Vajol Valpolicella Classico Superiore Ripasso

品種組成約為50% Corvina、25% Corvinone、15% Rondinella、5% Molinara以及5% Oseleta。酒精度15%。葡萄採收後在高處閣樓進行一個月的風乾,於十一月初以溫控發酵釀造,發酵與浸皮共長約15-20天,隔年二月以Amarone釀造後的帶皮酒渣進行「二次發酵」(約五、六天),之後在大橡木桶內培養24個月。略深的紅寶石色澤,聞有櫻桃、紫羅蘭、皮革以及略微菸絲氣息;入口,香料味鮮明,流暢滑口,開胃醒神,滋味飽滿同時帶有良好酸度與均衡度,嚐來精酸可口,但風味不顯薄弱(也喝不出15%)的酒精度(此酒風拜園區含許多Tufa岩石之故,本應是軟質多孔洞石頭,但此區因有地層擠壓顯得較為硬碎一些),尾韻佳,以煙草、皮革、薄荷、輕微植蔬以及仙楂片風味作結。(品酒時間:2016/06)。
