2016 Stefano Lubiana Estate Pinot Noir

以100%生物動力法耕作的自有園區葡萄釀成,葡萄種於中上坡,有兩種土質(帶礫石的灰色壤土覆於黏土之上+紅色壤土覆於礫石之上),手工採收後再以篩選輸送帶再篩一次。八成去梗且發酵前浸皮時間長於基本款Primavera Pinot Noir,兩成不去梗。部分在小木槽發酵,部分在不鏽鋼槽發酵。培養時約使用兩成新桶。酒精度13.5%。深紅寶石酒色,聞有玫瑰花瓣、紅莓果、炭燒、甘草氣韻,整體芬芳雅緻。入口,飽滿流暢可口,有明顯的櫻桃+可樂的氣息(我個人沒喝過櫻桃可樂),甘美好飲,礦物質以及海風鹹味也易於辨別,整體均衡優於Primavera Pinot Noir,中後段質地緊緻收攏使不致鬆散,尾韻以甘草與櫻桃果醬風味落幕。隔天再飲,深度與質地絲滑感更增,分數由9.25提至9.35。與紅燒豬腿節很合拍。(品酒時間:2017/07)。
